Leave the Gun, Take the Cannoli
Over the extended weekend I made cannolis. You know, those delectable little fried dough tubes filled with creamy goodness.I was pleased with the dough and the way it fried up, and the way the forms (cannoli tubes) worked. I was not, however, completely satisfied with the filling. The ricotta cheese seemed...gritty somehow.
This weekend I may try it again, but this time I'm going to try a heavy cream and cream cheese mixture and see if the mouthfeel of that isn't improved.
I'm something of a foodie, as you may have gathered.
